Bruins Burritos

Tuesday Night Dinner Club is back and I know seeing this blog will make all our loyal followers let out a big sigh of relief. Over the past few weeks people have been asking me is Tuesday Night Dinner Club dead? Why are your blogs so inconsistent? Are you done cooking? The answer to all of your questions is life gets busy. A lot has happened in the last month or so, but life is settling down as we segue into summer. Tonight we are going back to my early days in the kitchen, when I was just a young naive line worker at Qdoba. TNDC is bringing you homemade Bruins Burritos. I had to add the Bruins into the title because they are currently battling for the Stanley Cup.


Today was one of those blah New England Spring days. It is pouring rain, 50 degrees and gloomy. Good thing a fat burrito will always brighten the day. I grabbed a shopping cart and took out my list from group chat. At the market I bought rice, black beans, corn kernels, tomatoes, lettuce, peppers, onion, chicken breasts, cheese, sour cream, avocados, tortillas and lime. Burritos are really easy to prepare, the art comes into play when you craft the burrito. We first threw a few cups of rice in the rice cooker because that takes the longest. The black beans you can heat up on the stove top. The chicken we cut into cubes and cooked it on medium heat on the stove top. Tomatoes were sliced up and placed in a bowl to be used later. Peppers and onions you will want to slice up and saute on the stove until they brown. The cheese, sour cream and corn you can place into separate bowls to use as ingredients in crafting your burrito. When it came to the avocados we cut it into big slices.

To warm the tortillas place 5 on a plate with a damp paper towel on top, then put in the microwave for 45 seconds. When everything is sliced, cooked, sauteed and laid out, the crafting can begin. My burrito was not that stuffed because I am not a big veggie guy. My perfect burrito consisted of the tortilla, layer of sour cream, scoop of rice, chicken, peppers and cheese in that order. Then I roll a burrito like a champ because of my past life experiences. The amount you will want to buy for this meal depends on the number of people you are having to your feast..


It is always good to be back around the dinner club with your closest friends. This was the first time at TNDC that we had two married couples at the table. Life is good. Randy is now married. Port is married. Donut is looking for jobs in the big apple. Baron is getting closer to being a psychologist. I am now living with my girlfriend. All good and happy things for men of dinner club.
