Summer is flying by as we come to you live on the last day of July. It’s a beautiful summer day here in Boston, so TNDC is taking full advantage and grilling outside. This was a meal I had to come up with on my own because group chat decided to go radio silent. I get they are all busy working hard at their respective jobs, but without me we would have all gone hungry tonight. On the grill tonight we have flank steaks, grilled corn, mini potatoes and veggies. Now light up your grills and follow my cooking instructions.
At the market you will want to pick up already sliced flank steaks, bag of mini potatoes, 10 ears of corn, peppers, zucchini and squash. For the corn you will want to put the full ear on the grill and cook for about 35 minutes or until the husk starts to peel back. To prepare the mini potatoes cut them in half then toss them in a bowl with salt, pepper and olive oil. Wrap the potatoes in tinfoil and place on the grill on medium heat. Cut up your peppers, zucchini and squash into slices. Season the veggies with salt and a little olive oil. We have a veggie container meant for the grill that we use to make them brown. Flank steak is thin and cooks very quickly. We seasoned the meat with a dash of salt, pepper and red-pepper flake. Throw the steaks on the grill until cooked to your liking. Personally, I think medium rare is the best 😉 Follow these steps to enjoy a gourmet steak dinner.
This was one of my favorite meals so far this summer. The grilled corn was sweet as could be and the steaks were cooked perfectly. Last week there was no blog because I was busy getting ready to go down to Florida to celebrate my Papa’s 92nd birthday. It is always nice to get together with your family and celebrate happy occasions. Dinner Club is always a happy occasion and that is why we have kept it going for the last couple years. Steak Dinner
Flank steaks with grilled corn, veggies and mini potatoes
6 1 Pound Flank Steaks
10 Ears Corn
3 Peppers
1 Zucchini
1 Squash
To Taste Salt
To Taste Pepper
To Taste Crushed Red Pepper
Olive Oil
20 Mini Potatoes
Turn your grill to medium heat
Place the 10 ears of corn on the grill for about 35 minutes or until the husk starts to peel back (Peel corn when done grilling)
Cut your mini potatoes in half
In a bowl season with salt, pepper and olive oil
Wrap the potatoes in tinfoil and grill for 15 minutes
Cut your peppers, zucchini and squash into slices
Season with salt and a dash of olive oil
Place the veggies in your vegetable grill tray
Grill for about 10 minutes or until they start to brown
Season the meat with salt, pepper and crushed red pepper
Throw the steak on the grill for about 7 minutes or until cooked to your liking
Eat up!
