Super and/or Burrito Bowl

Tuesday Night Dinner Club is thankful to be born in a city that produces Champions on a regular basis. Tom Brady and the New England Patriots celebrated their 6th Super Bowl win today in the streets of Boston. Winning really does never get old. Especially for us Boston sports fans who had to wait a full 98 days between championship parades. Something else that doesn’t get old is eating. Since you can’t eat a Super Bowl we are eating the next best thing, burrito bowls.
I showed up to the market with my list in hand on this beautiful winter parade day. I grabbed my basket and got a package of ground beef, mixed peppers, onion, lettuce, brown rice, tomato, cheese, limes, avocados and lettuce. We grilled up the ground beef on a skillet and seasoned it with crushed red pepper, salt, pepper and olive oil. Sauté the peppers and onions together until they soften.
Cook up the brown rice. For the guacamole we mashed 3 avocados in a bowl, added half of a finely chopped onion, half a squeezed lime, 1 medium tomato chopped, a dash of salt, sprinkle of pepper, dab of hot sauce and then mixed until smooth. With those simple steps you have the groundwork to create the perfect burrito bowl. The Super Bowl isn’t the only bowl with a winning recipe this week. 😉
The turnout wasn’t the greatest for the dinner club guys tonight. Lois was too busy to show up and gave no excuses. Port was at the gym trying to prepare for his big wedding day in less than a month. I am running on fumes from the game on Sunday night. Hours of anxiety and pacing can really take a toll on the body. At the end of the day it was all worth it because we are World Champions again. TNDC group chat has also been going down the gutter. I will have to be the Kyle Van Noy of dinner club and start silencing the haters. Until next week…
