2020: New Year, New Club

Happy & Healthy New Year Dinner Club Family! 2019 was a great year for the men of dinner club and 2020 is going to be even better. Let’s do a quick recap of 2019! Lois joined Dinner Club and is fully onboard for the new year. Donut moved to the big apple to be closer to his girlfriend and for new opportunities. Port got married and is now Director of the summer camp we all met at. Baron is in his 25th year of school and closer to becoming the next Dr. Phil. Randy got married and is building a trailer to travel the country in. I moved in with my girlfriend Challah and we will be co-hosting dinner club.

Tonight we are making a simple dish, but perfect meal for a cold winter night. We are making wonton lasagna cups. These are an extremely easy dish to throw together for a last minute meal. You need to have cupcake trays, wonton wrappers, ground beef, tomato sauce and cheese. Spray down the cupcake trays with non-stick spray. Line each cupcake tray with a wonton wrapper. Cook the ground beef and then scoop in a spoonful of ground beef into each wonton wrapper. Add a spoonful of sauce to the ground beef. Sprinkle cheese on top and throw in the oven for 15 minutes on 400 degrees. If you don’t have a man child appetite like me you can add tomatoes or peppers to fancy up the dish. This is a great dish to throw together last minute and is great for leftovers at your work lunch the next day. To top off this awesome meal we all coerced Challah to make us cream cheese brownies.

I know I have been slacking on the blog front, but dinner club has been thriving in the background. TNDC spent New Years in New Hampshire skating on Newfound lake and playing boardgames by the fire. Randy and Donut also tricked me into going on a 5 mile hike in the mountains with a fresh foot of snow on the ground. I am not sure my hips will ever recover from that grueling experience.
